A chicken rissole is a dish made from breadcrumbs, egg, and cheese. The origin of this phrase is unknown. However, the earliest known use of the phrase was in a letter written by a mother to her son in England in 1879. In that letter she explains that she has been reading a book with a character who mentions "chicken rissoles" and that she wants to make them for him when he returns home from school.
